If you are looking for a nice post workout salad, this chicken pomegranate and cashew nuts is perfect. The chicken and cashew nuts gives you that additional protein. Pomegranate is known to help with Testosterone levels and also gives it that nice additional sweetness.
Incredibly healthy and low in calories. This lunch would be perfect if you are looking to cut down the fat or do some clean bulking. I did find the pomegranate to be a nice additional as I like the sweetness. The cashews give it that little extra crunch. You could replace with other nuts but make sure they are unsalted.
If you are short on time then this lunch is perfect as it takes very little time to make. The chicken is the most time consuming. You could replace it with some pre cooked chicken if in a hurry. This dish is also nice to premake at the start of the week as all ingredients should last a good few days.
The first step is to cook the chicken. Get the BBQ spice mix and rub it over the chicken. This gives the chicken that little extra flavor, reducing the blandness. Grill the chicken for roughly 20 minutes or until fully cooked throughout. Turn the chicken every 5 or so minutes to make sure it cooks evenly.
You can use any of your favorite salad leaves. I usually like a mixed salad or rocket salad also goes well with the nuts and pomegranate.
Plate the salad and add some chopped tomatoes and cubed bell pepper. Slice the chicken and put this onto the salad. Sprinkle the pomegranate and cashew nuts over the salad.
